Bantastic Weekend

I’m calling it a Bantastic Weekend and closing with some frozen banana treat recipes from  Organic, fair trade bananas are a staple in our house; and if they start to over ripen, I often put them in the freezer in a large freezer storage bag.  The peel will turn dark, but the inside of the banana is unaffected.  You can then simply take the banana out of the freezer, and let it thaw a few minutes with the peel on.  Simply snip the end with a pair of scissors and squeeze out the frozen fruit.  I typically use them in smoothies, banana bread, or as a ‘soft serve’ treat.  Freezing bananas means that none will ever go to waste!

Frozen banans are a perfect healthy alternative to ice cream for those with a sweet tooth as bananas contain almost 500 mg of potassium and help guard against high blood pressure and stroke.  They also contain tryptophan, serotonin and norepinephrine, which help prevent depression while helping to promote feelings of well-being and relaxation.  In addition, the vitamin B6 in bananas helps protect against sleeplessness, mood swings, and irritability.  So go on ahead, and have a bantastic day yourself!  Cheers!
